MCVITIE’S DIGESTIVES© TIRAMISU

This Italian classic is getting a fresh new look with the help of McVitie’s Digestives. The same light coffee rich taste that makes tiramisu so great now adds a new crunch that’ll have you wanting more.

INGREDIENTS

  1. Mix the yolks, vanilla extract and sugar in a bowl and whisk until they form a smooth, pale yellow mixture
  2. Mix the mascarpone with the egg mixture and set aside.
  3. Put the McVITIE’S DIGESTIVES© in a plastic bag and crush them with a rolling pin to make fine crumbs. Put the biscuit crumbs in a bowl with the grated chocolate and mix. Start to add the coffee, slowly. You want the biscuit to absorb the coffee but not go too soggy.
  4. Layer some biscuit in the base of four serving glasses, top with some mascarpone mixture, then another layer of biscuit and so on until you have run out of ingredients. Top with grated chocolate and leave to set in the fridge for at least two hours before serving.
