KEY LIME PIE

Serves 6 - 8
INGREDIENTS
- Preheat the oven to 200ºC/ 400ºF.
- Place the McVITIE’S DIGESTIVES© in a bag and crush with a rolling pin. Transfer the crushed biscuit to a mixing bowl and add the melted butter. Stir well to combine.
- Pour the mixture into the base of a 22cm loose-bottomed cake tin and press down with the back of a spoon.
- Lightly whisk the condensed milk with the egg. Stir in the zest of two limes, along with the lime and lemon juice.
- Pour the mixture into the cake tin and level out. Sprinkle the top with the remaining lime zest.
- Bake the pie for 10 minutes. Leave to cool slightly before putting in the fridge.
- Once cooled, remove the pie from the tin and serve.
