KEY LIME PIE

INGREDIENTS

  1. Preheat the oven to 200ºC/ 400ºF.
  2. Place the McVITIE’S DIGESTIVES© in a bag and crush with a rolling pin. Transfer the crushed biscuit to a mixing bowl and add the melted butter. Stir well to combine.
  3. Pour the mixture into the base of a 22cm loose-bottomed cake tin and press down with the back of a spoon.
  4. Lightly whisk the condensed milk with the egg. Stir in the zest of two limes, along with the lime and lemon juice.
  5. Pour the mixture into the cake tin and level out. Sprinkle the top with the remaining lime zest.
  6. Bake the pie for 10 minutes. Leave to cool slightly before putting in the fridge.
  7. Once cooled, remove the pie from the tin and serve.
